Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 2 ½ tsp kosher salt (divided use, or to taste)
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 2 ½ cups finely chopped onion
  • 2 tbsp minced garlic
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp chili powder
  • 2 cups chicken broth
  • 2 cans 4 oz each diced green chiles
  • 3 cans 15 oz each white beans (Great Northern, White Kidney or Cannellini) drained and rinsed
  • 1 cup heavy cream
  • ¼ cup cornstarch
  • 1 cup whole corn kernels fresh or frozen
  • 1 lime cut in wedges
