Excellent salad! After absorbing the notes from others, I used 1.5 lbs of sugar snap peas, tripled the radishes, doubled the vinaigrette, and used half the cheese in the form of feta. Served 10 people as a starter. Thank you all.

Ricotta and ricotta salata are not the same thing. Ricotta resembles cottage cheese, but ricotta salata is a harder, drier cheese.

How to slice? Sideways? Lengthwise? The latter is what the photo seems to show, but I don't know how to achieve that without slicing my finger and having the little peas get all over. Suggestions?

Perfection. I Added shredded radicchio and endive to fill it out and actually wound up making it even prettier and more delicious. Unlike other salads, also keeps really well. I didn’t think it needed more dressing as others have said so recommend tasting before adding extra. A lovely lovely dish that is as much a refreshing feast for the eyes and table as it is for the taste buds. Delish.

I have found that Queso Fresco, a Mexican crumbling cheese, is a good substitute for ricotta salata.

This was a bit bland. The proportions were off; this made a tiny portion of salad (I oz of peas per person?) and there is too much cheese and dressing. relative to the vegetables.

Delicious just as written- a great summery salad. Took more than 10 minutes but was still quick and easy. Made the dressing, sliced peas and radishes early in the day, tossed and assembled prior to serving. Letting the dressing rest gave the flavors time to meld. Will definitely make this again.

Sadly subbing Parmigiana for a feta-type cheese is an error of culinary judgement in my opinion...so suggestions the recipe is “off” is oddly regrettable on all counts ....the ricotta salata is specifically suggested because not-only for the rich texture ( not possible with hard cheese) but the sharpness/flavour...Bulgarian feta would be great if you could get it!

i've made this as written and loved it, but most recently I blanched the snap peas for exactly one minute before plunging into an ice bath and then slicing diagonally. The peas retain their crunch but are much brighter/ prettier and just a little bit more tender. (I also added some salt and sugar to the boiling water as my snap peas weren't the sweetest.)

I’ve made this many times because it’s always delicious. Great dish to bring to a party. I personally like to triple the amount of snap peas and use less dressing and cheese (I use feta).

We have fresh radishes and snow peas and herbs at our farmer’s market right now in New Orleans in May and this was a fantastic salad to make . I did need to increase the dressing a bit but I used an entire bunch of radishes and about a pound of snow peas. Excellent as leftovers.

Substituted ginger powder for garlic because allergic to garlic. Added watermelon per suggested in comments. Perfection!

The substitute guide at the bottom of the recipe does not include ricotta salata. I don't even know what that is. What can I substitute for it, if I can't find the real thing?

Perfect salad to kick off spring. Only used 1/4 cup of EVOO, added a squeeze of lemon, and subbed in pecorino for the ricotta salata as it’s what I had in the fridge. Will make again and again and again.

In southern Louisiana sugar snap peas and radishes are winter vegetables, and they have been in my CSA box every week this month. I made the salad per the recipe, and it is delicious. Even two-day old leftovers are crisp and flavorful.
