One of our family’s FAVORITE 30 minute meals! Tasty, fast and filling and only 1 pot to clean up!!
The other evening we got home from an appointment way later than I expected and we were all tired and hungry. I was hating that I hadn’t thought to prep a slow cooker recipe that morning. I quickly rummaged through the pantry pulling out my quick meal staples. I had this! In no time at all we had a one skillet meal full of veggies, protein and grains, thanks to a well stocked pantry!
Not only did our last minute dinner come together quickly, Uncle Bee said it was one of his favorite meals I have made! This is going in our regular meal rotation!
Beef & Rice Skillet Meal

Ingredients
- 1 lb ground beef
- 2 ribs celery, diced
- 8 oz mushrooms, sliced
- 1 onion chopped
- 3 to 4 cloves garlic, minced
- 15 oz canned tomato sauce
- 14.5 oz diced tomatoes, with juice
- 2 beef Bouillon cubes
- 1/2 cup water
- 1 cup Minute® Rice
- seasoning salt (or salt & pepper)
- Shredded Cheese (We used cheddar and mozzarella)
- green onions for garnish (optional)
Instructions
Brown beef in an oven safe skillet with mushrooms, celery and onions. The last 2 minutes, add the garlic. Drain off some of the excess grease. Add tomato sauce, diced tomatoes with juice and beef Bouillon cubes. Bring to a boil then reduce to medium/low heat and cover, cooking for 10 minutes, stirring occasionally. Stir in water and minute rice. Bring to a boil then turn heat off and cover for 5 minutes. Stir again, then season with seasoning salt to taste. Top with cheese and cover for 5 more minutes. Remove lid and place under broiler to melt cheese if desired. Top with green onions and serve.

This is such a drool worthy recipe! I am like you, when in doubt I always grab a box of Minute Rice... it has saved me from takeout SO MANY times!

My favorite Minute Rice is the microwave brown rice. I use it in all my rice recipes. Love Minute Brown Rice. I don't have a Kitchen-Aid mixer, but I have used my daughter's, and I loved it. Would really love one of my own. And, as for Aunt Bee's recipes, they are the BEST! Love them all!

Minute Rice is always a staple in my pantry and a go to. So glad to see a delicious recipe featured which I can't wait to try. The mixer would be a bonus as I am baking more since my mom died and I have taken over the family baking tradtions. I am finding a hand-mixer is sure not cutting it! :) Thanks for your blog- I am enjoying it!

I think the recipe maker meant two RIBS (not stalks) of celery. A stalk is the whole plant which consists of about 10-12 ribs!
