Air fryer potato wedges are one of my absolute favorite potato recipes.

They are Crispy on the outside and soft on the inside.

The air fryer produces crispy, golden-brown potato pieces you’ll love. With little mess and clean up, it’s the perfect no-fuss weeknight side.

You’ll need a few simple ingredients to prepare these crispy potato wedges.

Russet potatoes are ideal due to their high starch content, although Yukon gold or red potatoes also work.

Additionally, using extra-virgin olive oil or avocado oil helps achieve that desirable crispiness in the air fryer.

Lastly, I recommend seasoning the wedges with salt, black pepper, and herbs like fresh parsley or oregano, though you can experiment with your preferred seasonings.

How to Make Air Fryer Potato Wedges

Step 1

Wash the potatoes well under running water. I love them skin-on, but peel if you prefer.

Step 2

Cut the potatoes with a sharp knife on a cutting board first in half, then in half again to create perfect wedges.

Step 3

Soaking time is the key to my crunchy/soft secret.

Here’s how it works: excess starch causes the potatoes to soak, so I soak the wedges in cold water for a minimum of one hour. This allows them to remove the excess starch.

After the soaking time, wash the wedges under running water, then dry them well with a clean kitchen towel.

Step 4

Toss the wedges with olive oil, salt, pepper, and parsley in a large bowl.

Preheat the air fryer to 380°F for a few minutes.

If necessary, work into batches. Arrange the seasoned potato wedges in a single layer in the air fryer basket.

Shake every 5 minutes and cook for 15-20 minutes.

Step 6 (optional)

Make a delicious sweet chili mayonnaise.

In a bowl, put 4 teaspoons of mayonnaise and 1 teaspoon of sweet chili sauce, and mix well.

For a spicier kick, usechili pasteinstead of sweet chili sauce.

Serve while still hot, accompanied by your favorite dipping sauce.

  • Use the right potatoes. Choose a starchy type of potato. Avoid waxy potatoes, as they do not hold up well when cooked.
  • Keep potatoes in water for a minimum of 30 minutes; it helps to have potatoes that are crispy on the outside and soft on the inside.
  • Dry the potatoes perfectly to prevent moisture from forming during cooking.
  • Cut the potatoes all the same thickness and size for even cooking.
  • Do not overcrowd and shake the basket, if we put too many potatoes, the hot air does not circulate well, and therefore you will not have the desired crispy texture result.

Here are some recipe variation ideas:

Parmesan wedge potatoes: A delicious variation of these potato wedges.

To prepare them after cooking for 15 minutes, transfer the potatoes to a bowl, add grated Parmesan cheese and Italian seasoning, and mix well.

Let them cook for another 5 minutes until they are well golden brown.

Paprika wedge potatoes:Add paprika powder and garlic powder and mix before cooking.

The paprika will give a beautiful color to your potato wedges.

Curry spice: An Indian-inspired version uses curry powder, cumin, coriander, and garlic powder.

Spice it up:For fans of heat, a dash of cayenne or red pepper flakes adds a kick.

I highly recommend enjoying the potato wedges immediately after cooking for the best texture and flavor.

However, I’ve found storing leftover potato wedges in the fridge works well for 3-4 days.

To prevent sogginess, be sure to transfer wedges to an airtight container once cooled.

If reheating, the air fryer comes in handy again. Simply add wedges and cook at 400°F for 3-5 minutes until piping hot and crisped.

For longer storage, freezing is my go-to.

After the wedges have fully cooled, transfer to a freezer bag or container, squeezing out excess air. Properly frozen, they’ll keep crispy for up to 6 months.

When ready to enjoy, cook for for 8-10 minutes from frozen.

Instructions

  1. Rinse and cut 4 medium potatoes into straight strips.
  2. In a large bowl, soak the potato wedge in cold water, minimum 30 minutes.
  3. Drain and dry the wedges well.
  4. Preheat air fryer.
  5. Toss onto the wedges 1-2 tablespoons of olive oil, then season with salt or other desired seasonings.
  6. Cook at 380F degrees (190C degrees) for 20 minutes, shaking the basket every 5 minutes until golden brown and crisp.
